This page might best be called "The history of
Foods in Calabria." Presented here are foods that made their way through the
1800s and right up into the turn of the century and further.
Don't expect to
find too many dishes that Mama used to make or even Grandma for that matter.
Great Grandma? Perhaps! Remember too! that food preparation varied from Province
to Province and from village to village.
Calabria's history is
one of continuous occupation. From the time of the early Greeks to the later
invasions by Arab, French, Aragonese, Spanish, Austrians and Bourbons and later
by large numbers of Albanians who fled to Southern Italy to escape the invading
Ottoman Turks, all of whom contributed to the developing Calabrian culture,
dialects, food diet and life style. These influences show up most where each
individual ethnic settlement was the greatest. For example In the Southern
provinces (example; Reggio Calabria) as well as Sicily you find a greater amount
of Arab, French, Spanish and Greek influence in the foods preparations. Whereas
in the Northern provinces, Cosenza for example, the influence is more German,
Spanish, French with a stronger Greek influence found mostly in the mountain
towns.
Although food tasts are constantly evolving, one must agree that
the greatest change in Calabria's Cuisine came with the introduction of two very
important items, the "Pepper" and the "Tomato" And although they are relatively
new, brought to Europe in the late Seventeenth Century from the new world, they
quickly made their way to the Calabrese kitchen finding a place of extream
importance in much of Calabria's cuisine. Untill that time, A Calabrian's diet
consisted mostly of Vegetables, Grains and a very small amount of available
meats when possible.
To furthure understand Calabrias slow progress, you
have only to look back at Calabria's Geography and consider that right up until
Italy was unified in 1861, Calabria had only one road that crossed it from the
border in the North to Reggio in the South; the railroad was nonexistent and 90%
of the towns had no internal or external roads. This phenomenon created an
internal and external isolation, with population centers of the highlands and
the valleys unable to communicate, and with impassable roads during the winter
season.
Calabria today is like most other places. Its people are
no longer secluded, and with the introduction of "TV", "Movies" and other forms
of communication the lifestyles, dialects and traditions are quickly being
replaced with a common connection to the rest of Italy.
Too! In Modern
Calabria, as with the rest of the world you will now find Mayonnaise, Mustard,
Catsup, Hot-dogs, French fries, as well as Coca Cola and McDonalds and a host of
other diversions.
The foods that are listed on these pages are recipes
that have been submitted by readers. I have made every effort to confirm the
autheticy of their origins and to my knowledge all are indeed authentic.
As
for the recipes themselves, there has been some modifications (Minimal as
possible) The cooking processes may be different for obvious reasons, since most
of us don't have clay or brick ovens, or use iron pots in this day and age and
many of the ingredients required for preparation are no longer available in
their raw form. But you can be sure that no real changes have been made to the
recipes themselves.
